This was not the original plan, but it tasted good: veggie stew with dumplings (recipe from Zardy Plants).

I have made stew with dumplings I liked more than this, but this was fine. It starts with a basic mirepoix, which is then seasoned with smoked paprika and Italian seasonings. One adds mushrooms, white beans, and vegetable broth and simmers the dumplings on top. When the dumplings are done, one adds coconut milk and spinach.

I garnished it with parsley because I had the parsley and I'm having fun with that right now.

The soup is very light, even with the dumplings, so I had a mug cake after this.
