Here's something a bit different: Quinoa, green beans, and tofu steaks with apricot-mint compote (recipe from Nutrition Studies).
Well, the recipe claims it is a compote; it really isn't, because the "compote" is raw, and I understand a compote to be cooked. And I think the original photos were made with chopped rather than grated apricot and cucumber. But we won't quibble, because this is a really good combination!
I probably steamed my green beans "too long" because they aren't so vibrant anymore, but I'm going to give myself grace on that one. They still tasted good.
