Dinner Bowl #11

 


I had some white beans to use up, so made this white bean and cashew "cheese" sauce with pasta from a recipe from Ellie Likes Cooking. Alongside that, I had some sauteed zucchini and mushrooms (recipe from Recipes Vista) and some peppers cooked with onions.

There are definitely pasta sauces I've preferred to this one, but it was a tasty option, and the beans mean more protein. The pasta is also a protein-infused pasta (Barilla Protein+), so it was plenty with the pasta, beans, and cashews. And who doesn't love a good bowl of noodles?

More comfort food, in the hopes that I feel better soon.
