Rosehip Soup with Vanilla Ice Cream and Mandel Biskvier: A Swedish Taste Test

 
No work today, so no packed meal to show you. But I do have a bowl of rosehip soup with vanilla ice cream and Mandel biskvier (tiny almond coconut cookies) from lyktabento instead! She said this was how it is typically eaten--warm with vanilla ice cream (melting fast as I tried to take a picture) and the tiny cookies.

This was good--very unusual, but good. The rosehip soup is kind of blah on its own, but with the ice cream and cookies, it is a good balance of flavors. The cookies are firm enough to stay pretty crunchy even in warm soup and melting ice cream, but also really nice plain.
