ECO Lunchbox Three-in-One #79
Brown rice salad with tahini dressing from Going Solo in the Kitchen and broccoli-apple salad (sort of based on the recipe at Bowl of Delicious).
This didn't photograph super well, but it was good and satisfying. I did not have any zucchini to put in the rice salad, but the recipe said it was optional. I really ended up missing it, though. It is still a good salad, just not quite as delightful without squash.
I'm glad I tried this broccoli salad! I wouldn't have thought of putting these things together without a little online inspiration but it really did turn out well. I veganized it relatively easily and knew better than to put in the dried cranberries (I knew we wouldn't get along well in this combination based on previous experience with broccoli and cranberries). I blanched my broccoli, too, because I can't deal with raw broccoli. My mother loved it but it has never appealed to me at all. But Martha Stewart recommends blanching broccoli used in salads so I feel vindicated somehow. In any case, I made the salad my own, and it was its own reward.

My tummy doesn't like raw broccoli either, so I always blanch it before putting it in salads or using as a dipper.

DeleteOooh this looks so good! I'm in the no raw broccoli club, I find nothing appealing about the texture of it. I would blanch mine too. I would never think to combine broccoli and apples but it looks really great. The brown rice salad looks good too, I bet the zucchini would put it over the top!
