Yet another attempt at veganizing classic tater tot casserole, orange slices, a biscuit, margarine, and cucumbers tossed with grape tomatoes.
Although this casserole isn't really
there yet, I have enough vegan skills now to know what I think is wrong: It needs cashew cream. Stay tuned.
I think i had a deprived childhood! No tater tots to speak of except for maybe at a random friends house (?) and certainly no tot casserole which sounds like a wonderful magical thing i need in my life!
ReplyDeleteI’ve been very into snacking on cucumbers lately, something about the juicy crunch is very satisfying.

It's pretty funny because I've been attempting to veganize something I may or may not have ever had as an omnivore--it's more upper midwestern fare, and I've never lived in that area. But I love tater tots, so really why not?
DeleteOoooh!!! I've never had tater tot casserole but I'm definitely excited to see the recipe when it's ready! It sounds like I've been missing out. The meal looks awesome and I LOVE biscuits so I'm loving that!
ReplyDeleteBiscuits really go well with the casserole! I'm sure I'll get it right eventually.
DeleteYum, I'll be looking forward to your tater tot casserole recipe -- the cashew cream sounds like a great idea!
ReplyDeleteI think it will make a difference. One recipe suggested adding French fried onions, too, which would also be awesome but that's edging toward green bean casserole with cheese and tater tots--which would probably be amazing but not what I'm going for here, I think.
DeleteI've made tater tot casserole a few times, but definitely not something that I grew up eating. I love everything potato gem related though (that is what we call tater tots here in Australia).
ReplyDeleteI think these are technically "potato puffs" because Tater Tots is a brand name but nobody really calls them anything else here. I like the name "gem" for them!
