Thermos 3-Tier Bento #43
Garlic toast, shredded iceberg lettuce with Just Thousand dressing, and potato soup veganized from this recipe (very loosely based on it, really).
Though I have not done proper grocery shopping, I did do a basic soy milk and bread run, so I was able to make this. One good thing about feeling a little better, even if I am still conserving energy I would normally spend on meal planning and shopping, is that I have more mental bandwidth for thinking creatively about what I have. I didn't expect this soup to be this good, but it was amazing and I will definitely be making it again. But when I do, I'll style it more attractively so I feel it is worthy of a recipe post. It really should be served with a less sad salad!

ReplyDeleteThanks! It was really good! It was considerably fancier than most potato soup I've had before.
