Monbento Square #13 (Double Tier)

Homemade sausage pizza, some creamy dill dressing, and a simple salad of mixed baby greens, cucumber, cherry and "Twilight" tomatoes, and Bac'n Bits.

It was my first time to try the "Twilight" tomatoes, which were on sale along with the cherry tomatoes. They have a very distinctive flavor, somehow richer and maybe a bit sweeter than a grape tomato.

And this means, as you may have guessed, that I did some actual grocery shopping! Although I am not usually that much of a green leafy salad person, I had intense salad cravings. This went really well with the pizza.

I'd bought these smaller pizza crusts from Target (their store brand shelf-stable pizza crusts are the only pre-made ones I've seen that are vegan). They're a great size for me--half a pizza is just right for one serving. I topped this pizza with traditional tomato-based pizza sauce (from a jar, I'm still not exactly running at 100%), Violife mozzarella, peppers, onions, mushrooms, Wegmans "Don't Be Piggy" sausage crumbles, and Violife Parmesan.

The "Don't Be Piggy" sausage is really good! This pizza benefited from a sprinkling of Italian seasoning and garlic salt, and red pepper flakes would have been nice if I was in the mood for something spicy, but it was pretty great as it was.

  1. We don't have Twilight tomatoes here, but we have some that I think are similar. They are quite nice, good for snacking on as well.
