Monbento Square #18 (Single Tier)
My best effort at making the quinoa stuffed acorn squash from Vegan Huggs.
Mine is not so colorful. Probably a similar garnish with fresh thyme leaves would have made it prettier. But this was a really nice meal for those times you're looking for a "holiday" main dish that people won't be distressed by because they're not used to meat substitutes. And it's not very hard, either, just a bit time consuming. And the leftovers are just fine.
I love squash, in all iterations, really.

I haven't made stuffed acorn squash in a while; yours looks quite pretty!
