Monbento Square #15 (Single Tier)
A sweet potato (baked in my slow cooker) with spiced black beans and spinach and a side of homemade guacamole.
I'm not sure I should call this guacamole, but the recipe that inspired this (a non-vegan one) called something very similar guacamole, so why not?
This meal really made me feel like I was getting life under control again. I put the sweet potatoes in the slow cooker in the morning (I just washed them and threw them in; I skipped the original recipe's sweet potato treatment) and came come to them smelling wonderful and ready to be topped. The beans and guacamole were easy to whip up in almost no time, and I had easy leftovers to pack for the next day's lunch. The leftovers were also great. I have only a single complaint: I didn't make enough guacamole!

I'm pretty sure I could eat some variation on guacamole every day and never get tired of it.
