Recipe: Vegan Spinach Julius

This seemed a little crazy, but it worked! You may recall my fondness for this recipe for Orange Julius at Vegan Yumminess. I used that as a springboard for this fun spin on a green smoothie. This is Spinach Julius! But it doesn't taste like spinach. It tastes like citrus, creamy goodness, and hint of vanilla. There are definitely worse ways to get your veggies.

Spinach Julius
Serves 1

3 ounces frozen orange juice concentrate
1/2 cup soy milk (I like to use sweetened for this, but you do what you like)
1 frozen banana
2 handfuls of fresh baby spinach
1 teaspoon sugar (optional; the banana may make it sweet enough for you)
1/2 teaspoon vanilla
A pinch of salt

Put everything in a blender, blend it until it's smooth, and drink up!

  1. Oooh! Love it! Though I can never find OJ concentrate here, only orange drink concentrate, which is basically diluted orange juice with a bunch of sugar in it and it is foul. So if I see OJ concentrate needed, I normally use fresh OJ with a few drops of orange essence for extra oomph.

    1. It's not that common here anymore, either! People prefer to get juice rather than frozen concentrate. But sometimes what you want is frozen concentrate!

    2. Which is not to say you can't use orange juice if that's what you've got--just that I'm frustrated that a once-ubiquitous thing became so rare.
