Sequestration Meal #205
I was on an extended break from work over the holidays, so my leftover Tofurky ham and mashed potatoes turned into cheesy mashed potato waffles with ham (you can't see it, but it's chopped finely in the batter). In order to make mashed potatoes into waffles, you'll want to add a flax egg, some non-dairy milk, and a bit of flour. My additions here were chopped scallions, the aforementioned ham, and a bit of Violife cheddar. I topped my waffles with Wayfare non-dairy sour cream, scallions, and Bac'n Pieces. This made leftover mashed potatoes into a whole new experience!
I wasn't totally reinventing the wheel, so I had my leftover rainbow carrots and spinach as they were.
This meal is beautiful and right up my alley! Thank you for your hard work and honesty. Your blog already was a favorite but in 2020, it became a great source of inspiration.
