Sequestration Meal #206
Because I am apparently a bundle of nervous energy with a need to put it somewhere (aren't we all--although I'm usually not going the energetic route, really!), I re-invented my leftover mashed potatoes yet again and made some boxty. I followed this recipe from the Fiery Vegetarian which was helpfully already vegan. I had my boxty with a slice of Tofurky ham, the rest of my leftover rainbow carrots (which are honestly just looking purple at this point), sautéed mushrooms, and sliced tomatoes. The boxty also got a garnish of non-dairy sour cream and scallions.
Boxty are, of course, the Irish answer to the latke, and I've always loved them but rarely really want to invest the energy in making them. When seeking to distract myself, though: Game on! What sets boxty apart from most potato pancake-like things is that they involve both precooked mashed potatoes (leftover mashed potatoes are ideal here) and shredded raw potatoes.
I now have precisely one tiny rather sad looking potato left, but I'm sure a soup will make a home for it.

ReplyDeleteThey're really good! You can also thin out the batter and make a kind of potato wrap thing out of them.
