I am sure that whenever it was I decided to make this, I had a reason. I don't know what that reason was, now, because it wasn't good for much on the use-it-up scale and required me to buy a can of artichokes. But it was good anyway. This is one pot spinach and artichoke pasta (recipe from From My Bowl), sauteed yellow squash, steamed broccoli and carrots, and mushrooms with red peppers and onions.
I used a protein-boosted pasta for this (Barilla Protein+ penne) and figured that would be enough on one of those days I didn't want a specific protein-focused main dish. I put soy milk in my herbal coffee after the meal, and had a snack of protein yogurt mixed with tahini. It all worked out.
Sometimes, what I really want is vegetables, and this meal has plenty of that, so I was happy with it.
