I had some leftover nacho cheese sauce, as well as some leftover rice in my fridge. And I had some slightly sad vegetables in there, and a few things in the freezer. All of this came together to make this cheesy veggie soup with chick'n and dumplings.
I can't even remember everything I threw into this soup. I was putting off grocery shopping, and something about that tends to be a fun time for me. As best I can recall, this has onions, carrots, frozen broccoli, mushrooms, frozen peas, jalapenos, veggie broth, nacho cheese sauce (it's cashew-based with nutritional yeast), the end of a block of Daiya jalapeno Havarti cheese, rice, and JUST chicken. And then I made dumplings to simmer in the broth.
I know I just had chick'n and dumplings, but when you're out of bread and out of potatoes and you don't want more pasta, this seems like the thing to do. And it was delicious, and that's what matters! It wasn't as spicy as you'd expect, but still it had a slight kick to make it a bit different.
