Dinner Bowl #127

 


This is one of my best clear-the-fridge meals yet! Here we have carrot rice, coleslaw, some vegan bulgogi strips, and gochujang mushrooms.

I had bought the bulgogi when the store was out of tofu and I was grabbing whatever was available. But I love those, so I really didn't need much convincing. The carrot rice used up the last of some carrot juice I had, plus I knew I loved that--again, an easy win. I've been tending to keep cabbages on hand because they last so long in the fridge, and of course, I love Dolly Parton's coleslaw. The gochujang mushrooms are one of my favorite recipes, and it finished off the last of my mushrooms, Altogether, there's nothing I would change here.

Those last few meals before I cave and go to the grocery store are getting better and better. Wait until you see what comes next!
