Laptop Lunches #312

Spanish rice (I messed this up somehow, and I'll have to figure out what I did wrong before I can share the recipe), some Goya refried beans (Rancheros--still my favorite), a quesadilla made on the last of my mini tortillas, and avocado chunks with cilantro sprinkled on them.

Avocados were on sale. It's a vegan miracle!

    1. They had to sit out on my counter for more than a week to ripen, but otherwise, yes, on sale and perfect!

  2. Iā€™m seriously incapable of making rice. Itā€™s almost comical. I love spanish style rice but am lucky because the bodega on the corner actually sells it and itā€™s accidentally vegan (!)
    Nice score on the sale avocados, that kind of thing makes me so happy :)) do you ever make chocolate avocado pudding? I made some again the other day and it really hit the spot

    1. I can make amazing Spanish rice, but I think I left out a spice or something. But lucky you, having a ready supply like that!

      I haven't made chocolate avocado pudding because it seems to me chocolate pudding is really easily made with tofu or plant milk and cornstarch, and I love avocados so much I can't imagine masking their flavor with chocolate. What is it like?

    2. I like the avocado version more because it has a more creamy texture, and i do half cocoa powder and half melted dark chocolate so itā€™s really rich and indulgent. Works great for a slightly too ripe avocado or one thatā€™s a bit bruised and not great to eat as is
