Lunchopolis #67
Seitan sandwiches, some vegan coffee cake (recipe for that coming soon), orange slices, cucumber slices, and halved grape tomatoes.
It wasn't entirely as planned, but it was good. I made some sandwich rolls based on the hot dog bun recipe at Mary's Test Kitchen, then made some seitan using the recipe at the Buddhist Chef. I was doing this over the weekend as food prep for two different meals and it occurred to me that they might go together. I spread some Vegenaise and yellow mustard on the bread and it was an amazing simple sandwich. It turns out I don't always need to buy my deli meats; I can make them like some kind of wizard.

Whoahh...!!! You made your own buns AND the seitan?? And the coffee cake? I’m totally impressed.
ReplyDeleteI tried to make seitan exactly once many years ago and it was a big project and total Epic Fail in so many ways. Then again, i dont eat a lot of seitan anyhow- but this looks so easy that if it was around i would certainly enjoy it! Maybe time i give it another go.

I've had my share of epic seitan failure myself. But this recipe was pretty straightforward and didn't result in a hard block I could't chew. I halved the recipe and wrapped it in foil instead of plastic when I boiled it but otherwise I followed the directions and it was really good.
DeleteOk I'm seriously impressed! All of the homemade elements in this meal are incredible. I can't wait for the coffee cake recipe, I love coffee cake and haven't had it in so long! The homemade buns look so good, I really need to try out bread making. I have been saying I'm going to for so long but I never do!
ReplyDeleteIt's both easy and hard to make bread. It's easier for me than a trip to the store, so that explains part of why I've been making my own a lot lately. But it does require some mental space--you have to at least know you have bread somewhere rising that needs to be poked at periodically--and I think buying your own is also a totally legitimate choice.
