Carrot zucchini chickpea fritters (from Vegan Richa) over couscous, an improvisational carrot-cucumber slaw, and a little bottle of ketchup.
I baked the chickpea fritters this time rather than frying them, and I cut some corners by just putting all the spices in untoasted. They still make for a really good meal, and ketchup, as Richa suggests, is a great accompaniment. Plus it gives me an excuse to use my travel ketchup bottle.
