Skater Lunch Box #54

Carrot zucchini chickpea fritters (from Vegan Richa) over couscous, an improvisational carrot-cucumber slaw, and a little bottle of ketchup.

I baked the chickpea fritters this time rather than frying them, and I cut some corners by just putting all the spices in untoasted. They still make for a really good meal, and ketchup, as Richa suggests, is a great accompaniment. Plus it gives me an excuse to use my travel ketchup bottle.

  2. Those fritters sound delicious! I’ve had great success with other recipes from vegan richa, her lentil bolognese is a favorite. Such a cute ketchup bottle!!
