Happy Jackson Snack Boxes #69
Waldorf salad, blackberries, oat cakes, and a slice of Daiya cheddar.
Part of my rebellion against cooking is rebelling against planning meals and doing logical grocery shopping, so that can mean combinations like this. But this was pretty good anyway, even though I think Granny Smith apples aren't the best choice for Waldorf salad.

It looks pretty good for a thrown together lunch to me!
ReplyDeleteI agree with Susan, it looks pretty darn tasty for a thrown together lunch! How do you like the sliced Daiya? I haven't tried anything but their shreds and I've heard their other cheese has gotten better.
ReplyDeleteI like it! I thought I had just gotten more used to non-dairy cheese but maybe it really is better? Anyway: With the sliced Daiya, as with many of the dairy cheeses, it's best to let it come to room temperature before you eat it. That works out a lot better than eating it cold.
