Laptop Lunches #320

Mock tuna noodle casserole (recipe coming tomorrow!), half a tiny apple, garlic toast, and steamed carrots.

I seasoned the steamed carrots as I typically do any plain veggie--a bit of margarine and salt and pepper--and they were perfect. But today is mostly a proud day because I made this mock tuna noodle casserole, in all its cheesy goodness.

    How do you stop the toast going soggy in your lunchbox?

    1. Ah, the toast! You have to let it cool completely before packing it, preferably on a wire rack. This usually does the trick. If you like to pack sandwiches it's also nice to toast the bread a bit before you make them so they don't get soggy (I almost never pack sandwiches, of course). But on the other hand, I don't mind it if it gets mildly soggy with buttery, salty, garlicky goodness, all the same. Usually it doesn't get soggy but I have learned to live with the risk.
