You may well be wondering if I've lost my mind here, but I promise you I haven't: This is cornbread salad. Apparently an American Southern staple, after I saw it in a few places I decided it was a good use for some leftover cornbread muffins. Basically, cornbread salad can be whatever you want it to be, but most recipes seemed to have bacon (for which I used some tempeh bacon), tomatoes, bell pepper, onions, and mayo (for which I used Vegenaise). I topped the odd-looking stuff with scallions and black pepper.

If I had anything to compare it to, I'd say this is most like eating a cold stuffing--it has fat and veggies in it, and it makes the bread moist and hold together differently. I think I like stuffing better but it was still good. I don't know that I'd make it again and it's not the absolutely amazing thing many online recipes would have you believe, but if you're intrigued, I'd encourage you to make it sometime. We can't go anywhere really (or I can't anyway) so it's nice to enjoy the tastes of far-off places while we sit at home.

  1. Have you ever had panzanella (I have not) and if so, is it parallel-ish in any experiential regard? Intriguing, anyway!

    1. I've had panzanella, and it's not really that similar. Panzanella uses more of a vinaigrette and the bread is cubed and tends to behave a bit more like croutons. But there are recipes for panzanella with cornbread, if you want to try them!
