Asian romaine salad with sesame dressing, vegetable bird nests with dipping sauce, and cocoa-coated almonds.
Trader Joe's makes the vegetable bird nests, and they are amazing.
I still have a lot of romaine lettuce; it was, after all, incredibly cheap. So here I present a salad based on this recipe. Mine is scaled down for one and skips the step of roasting the almonds (I almost always skip the step of roasting nuts and seeds, because I buy mine already roasted.)
Asian Romaine Salad with Sesame Dressing
Serves: 1
Salad:
2 cups romaine lettuce, torn (about 5-6 large leaves)
1/2 avocado, cubed
1/4 cup canned mandarin oranges
1-2 tablespoons sliced almonds
Dressing:
4 teaspoons rice vinegar
1/2 tablespoon sesame oil
1/2 tablespoon soy sauce
1/8 teaspoon dried mustard
1 tablespoon roasted sesame seeds
Lay down a bed of lettuce in a container. Top with avocado, oranges, and almonds.
Whisk vinegar, sesame oil, soy sauce, and mustard together until well blended. Stir in sesame seeds.
When ready to eat, dress the salad and toss gently.
