Skater Lunch Box #35

This is a crispy chickpea cutlet with lemon caper sauce (from Living Vegan) on a bed of lettuce with some grape tomatoes. I also stuck a sprig of parsley in to plug a gap. (These cutlets have a lot of parsley in them, but not a whole bunch!)

The chickpea cutlets are really good! They're not crispy as leftovers like this, but still tasty.
