Monbento Square #3 (Double Tier)
A simple salad of lettuce, tomato, red onion, cucumber, and black olives with a creamy Italian dressing; macaroni dumplings; and stroganoff made with Gardein beefless tips.
If you're just joining me for #VeganMoFo, I'll repeat the tip I have given so many times: These noodles, made by Light n' Fluffy, are the absolute best vegan substitute for egg noodles ever. There is apparently also a Texas brand of this, Skinner, that looks promising, too (the websites are so similar I wondered if they were the same company somehow, a la Hellmans v. Best Foods). This is one of very few things I would probably buy online by the case if it disappeared from local stores. I am hopelessly devoted to macaroni dumplings.

OMG YUM!!! This looks so good and I'm so happy to see you are getting good use out of your Monbentos! This looks like a great meal and I need to find those noodles! I don't even like pasta that much but you make it sound so good!
ReplyDeleteThe Monbento square is pretty large, so it really only works when I'm doing a meal with a big salad on the side if I use both tiers. But it is excellent for that!

DeleteThis looks like an incredible lunch! If you're on the go, do you usually heat up your food? I'm quite suspicious of our office microwave, so I tend to only choose cold dishes!
ReplyDeleteI don't always heat my food and I often eat things at room temperature that might typically be served hot. The Monbento boxes come with microwave safe lids with silicone vents, so I will sometimes send those for a trip around the microwave for a minute (never more than one minute) at work. But I'm content eating cold food, too. I pretty well never heat any Asian meal I pack, for example.
