Cucumber salad with spicy Asian dressing, grape tomato halves (which need no recipe, I hope), double-fruit glazed tofu, and naturally purple rice (note I made purple rice long before I was vegan, so the lunch shown on that day is not vegan, but the rice recipe is).
It has been really way too long since I packed my lunch in this box! It's pretty small, but sometimes it's just perfect.
This is really single-fruit glazed tofu, because I just used regular orange marmalade and some ginger (as per the recipe directions) this time and it worked out great. It's such an easy recipe! It was pretty beige, though, so I made purple rice to go with it to make for a more colorful meal.
