Sakura 3-Tier Bento #63

I have recipes for all of this on my blog: Cucumber salad with spicy Asian dressing, grape tomato halves (which need no recipe, I hope), double-fruit glazed tofu, and naturally purple rice (note I made purple rice long before I was vegan, so the lunch shown on that day is not vegan, but the rice recipe is).

It has been really way too long since I packed my lunch in this box! It's pretty small, but sometimes it's just perfect.

This is really single-fruit glazed tofu, because I just used regular orange marmalade and some ginger (as per the recipe directions) this time and it worked out great. It's such an easy recipe! It was pretty beige, though, so I made purple rice to go with it to make for a more colorful meal.

  1. Wow! This is a beautiful lunch! The cucumber salad must be so refreshing in this heat and I've been wanting to get some tofu back in my life. This looks amazing.

    1. It's too hot to move sometimes around here isn't it? I probably eat too much cucumber overall but it's such an easy green side to whip up!

  2. This lunch looks gorgeous! Cucumbers and grape tomatoes are my go to lunch veggies at work because they are so easy to pack. And that fruit-glazed tofu sounds wonderful.

    1. I eat rather a lot of cucumber sometimes, but you're right--it's so easy to pack. It's also a reliable green veggie I don't have to cook!

    1. I'm glad I once lived in a dorm with a bunch of Korean women who taught me about things like purple rice. It's such an easy way to add a pop of color!

  4. I use to pack bento boxes for lunches, but stopped awhile ago. It is always a fun thing to do. The tofu looks extra nice.
