Interlude: Refusing to Cook
Sometimes, the stress of all this takes all my energy. So for today, I'm showing you some of what I ate on the days cooking was completely beyond me.
Daiya pizza. This was the first time I'd ever had a Daiya pizza (it was on sale for just $6--if you've seen it in my area you know how cheap that is!), and the crust was better than I expected. Actually, the whole thing was better than I expected, but next time I find it on sale I'll ignore the package directions and put the pizza on a cookie sheet. Cooking a pizza directly on my oven rack is always a recipe for disaster, as you can see in the upper left side, where when I was trying to get the pizza out and I tilted it or something and it fell a bit through the rack and scraped the cheese off into my oven. This was good for a couple of refusing-to-cook meals. This is the "supreme" pizza, which has Beyond Sausage on it alongside an assortment of veggies. It was a solid option. I hope these go on sale again sometime, and that it lines up with the magical grocery delivery window that may or may not ever open for me.
Lightlife veggie bologna and Daiya cheddar sandwich with a bit of lettuce and chips. Lightlife is usually not on my shopping list but it was what I could get. Their bologna isn't bad, but I stay away from their veggie turkey and ham and whatnot. I genuinely do not understand what it is about this company and how they get so many things just...wrong. It's a texture issue, maybe? I also want to know why the grocery store I visit most frequently only carries Lightlife as their veggie deli slices! Fortunately, when I was there, they had the veggie bologna, and I actually like the veggie bologna. Yves is better but this is not the time to be picky.
Trader Joe's Vegan Tikka Masala. This is one of my favorite frozen dinners. It's a bit spicy, but it's not too much for me. It's also one of the most reasonably priced frozen dinners I know of, and one of the lowest energy meals of all--just microwave it. If you can't put it in a bowl, it's fine eaten right from the tray, too. I don't know if putting it in a bowl really makes any difference with this particular meal.

Yay for no effort meals! Sometimes cooking is just too much. I've been cooking most night still, something different, but with delivery one or two nights a week. But sometimes the energy required to go and cook is just overwhelming.
ReplyDeleteI have no idea why being at home ALL THE TIME should be more exhausting than going to work every day, but somehow it is, sometimes. Other times I'm really glad I don't have to go to work because the symptoms of my varied maladies are flaring up. But either way, I'm glad I had some options, and I'm glad you do, too.
DeleteI know what you mean about those no effort days. I enjoyed Daiya's frozen pizza when I tried it too. They are definitely something I'd only buy on sale but I did enjoy it. I'm definitely a Tofurky girl and haven't had it in a while. I need a sandwich in my life now!

DeleteYeah, I always cook the Daiya pizzas on a cookie sheet; it works a lot better that way! The Tikka Masala sounds really nice!
ReplyDeleteIt's pretty good, and it's only about $3, so if you find yourself at Trader Joe's soon, I highly recommend trying it.
