Still low appetite--I haven't struggled with that like this in a while--so just a small bowl of pretty things: rice; a stir fry of spinach, tomatoes, onions, and mushrooms seasoned with soy sauce; and some Gardein mandarin orange chick'n, all garnished with scallions and sesame seeds.
In this mode (when I don't find the idea of food all that appealing) it can be hard to think of any food at all. I reverted back to some of my go-to easy bento food. I don't know how many times I've made some variation of the spinach and tomato stir fry--it's pretty and goes well with most things. It worked! After I ate this I felt a lot better. Good food makes a difference. Of course it seems obvious that it does, but at times it seems like nothing will make anything any better. I'm glad I powered through.
I rarely think of adding tomatoes to a stir-fry.
ReplyDeleteTomatoes won't work for some stir fries (nothing too strongly flavored), but I have found tomatoes to go really well with things that let the flavors of the veggies shine through. There's also the classic Chinese stir fry of eggs and tomatoes (which I veganized with success from JUST Egg).
