Sequestration Meal #278
I had some homemade pumpkin hummus in the fridge, and some of yesterday's cucumber tomato salad, so it was easy enough to pull this together. I spread the hummus on both halves of a toasted English muffin and had one with spinach and the other with avocado. I liked the avocado half more, but they were both good. You could probably just as easily have this for breakfast as you could for lunch, too.
Avocado always makes things best.
