Sequestration Meal #267
I'm not always in the mood for a hunk o' protein, especially when I don't have much of an appetite, but I still am trying to get a solid amount of protein at every meal, so this time I made some brussels sprouts with Sweet Earth's Benevolent bacon and called that a main dish. I had that with a side of mashed potatoes (made with Earth Balance and soy milk--the soy milk adds a bit more protein, too) and some roasted cherry tomatoes.
This worked! I got my veggie plate and some bacon. I think I overcooked the brussels sprouts a bit but that's fine, because I like soft veggies sometimes. Also, no matter my struggles with appetite, I can always seem to convince myself to have some mashed potatoes.
