Here we have creamy one-pot chick'n and orzo (recipe from Simply Veganized), some yellow squash, and red peppers sauteed with onions.
I used some leftover cashew cream for the vegan cream in this recipe, and a small yellow onion rather than a shallot; otherwise I made it as written (but cut in half, naturally; I always tend to do that). It turned out really well! I don't know where the mushrooms disappeared to in this photo, but I promise they were there with their mushroomy goodness. I loved it--so creamy and comforting.
The recipe itself tells you in the list to use vegan butter and in the instructions to use olive oil. I used olive oil, for what that's worth.
Though there are a lot of veggies in the original recipe and I'd probably be fine with just having that, it's just habit now for me to add more veggies to a meal, so I made some very easy sides I know I always like. And of course, I liked them.
