Do you know, you can have tofu scramble any time of day? It's amazing. Here we have a cheesy tofu scramble with veggies (onion, mushrooms, spinach, and cherry tomatoes), some avocado, a hash brown patty, and a toasted whole wheat English muffin.

I could eat this every day. A frozen version of this used to be my go-to meal when I was unable to think of what to have, but these days, I never even buy frozen dinners. What used to be a slight sticker shock at just around $4 or so is now $6. This meal runs me less than that, but it's also more appealing than a dinner from a cardboard tray.

When I had this, I spread some margarine on the English muffin, and it was a delightful meal. It was slightly on the larger side for me, and I felt really stuffed afterward, but it was probably good for me.
