Dinner Plate #17

 


I experimented with something I saw online, and it kind of worked, if not being anything spectacular. These are roasted cauliflower tacos with some vegan charro beans, some Mexican rice I had stuck in my freezer from the last time I made Mexican rice, and some sliced avocado.

There are undoubtedly better tacos. I've made better tacos. But these were fine. The whole meal, altogether, didn't leave me feeling deprived, so I'll count that a win.

I don't know why I just keep wanting rice. But I do! And I guess some people eat rice multiple times a day without thinking it's weird, so there you are.

This meal also got me to use up my package of little flour tortillas, so I count that as a win, too.

I didn't eat this on New Year's Eve, nor am I writing these words on New Year's Eve. It's a few days before that. But now is as good a time as any to say that I am resolved, for 2025, to get better control over my anxiety over food, and to be okay with using things up and improvising when needed. I know I have to be gentle with myself, so I'm not going to do anything drastic or harsh, but you'll see (I expect) a lot more focus on simply using what's on hand in the coming year.

That also means using my freezer more--making things like rice that can be frozen for later to save time without necessitating keeping as much of other "easy foods" around all the time.

You'll see pantry challenge food for a few more days, but even after I shop, you'll likely see a lot more things like this, is what I'm saying.

I think your resolution is great and please reach out if you need support! Pantry challenges and freezer meals are great and you are super creative so I know you'll come up with delicious ideas.

    1. Thanks! It's really just anxiety--I have the money. It's just something to work through. But I think I'm doing pretty well!
