Low Bowl #22
Here we have steamed green beans, herbed spaghetti squash, a lentil beet burger patty (recipe from Coley Cooks), a salad of arugula with tomato and cucumber, and some sunflower seed sauce (recipe from Wellness Dove).
This might look a bit better than it was. It wasn't bad, but it definitely didn't live up to the vision in my head! The very best part of this was the green beans and spaghetti squash, which is no surprise given how much I've grown to love vegetables. The sunflower seed sauce kept separating on me and was very bland. I made a full recipe which means I have a huge jar of it to figure out how to use--I'm sure I'll come up with something, but I was hoping it would be more of the amazing thing to bring everything together that you want in such a sauce.
The lentil beet burger was fine. It wasn't great, and it wasn't bad. I'm happy enough to have made the patties to use up the end of a bag of lentils, though, and the flavors were pretty good. I'm hoping it will turn out to be one of those things that improves as leftovers. Sometimes we luck out!
