Dinner Plate #16
I realized that I was gravitating endlessly toward rice in my December pantry challenge (such as it was), so I made an Asian-themed meal without rice--and also without noodles. (Sacrilege, perhaps?) Here we have my favorite Korean carrot salad (which is actually Ukrainian, as I understand it), some smoked tofu, something similar to Korean potato salad (but without eggs) (gamja salad), and some Korean zucchini pancakes (hobak buchim) with a basic dipping sauce.
This was delicious! I didn't miss rice at all given all the carbs. It's been a really long time since I made an Asian-style potato salad, but I really love that mashed potato-style salad. And the zucchini pancakes are always delicious, while the carrot salad is one of my all-time favorite recipes.
This is a great meal! I absolutely love zucchini pancakes, yum! The carrot salad looks fresh and delicious. I definitely understand wanting rice, it's delicious, reliable and comforting!
