Dinner Plate #27

 


This is the best meal I've made in a long time: A tequila-infused soy curl taco (recipe from Plant Power Couple), refried pinto beans, Mexican mushrooms (recipe from Muy Delish), and Mexican rice from my freezer with guacamole, pico de gallo, and non-dairy sour cream on the side.

Aside from the rice in my freezer (I am really doing well with cooking things and freezing some here and there to prevent myself from buying pricey convenience foods), I had a bag of soy curls in my freezer. Usually, I keep soy curls in my fridge, but I must have stuck some in the freezer at some point. I used about half a bag and cut the recipe for the tequila-infused taco "meat" in half. And because I'm using the things I have, I will also note that I had a tiny bottle of tequila that I took off the hands of someone who didn't want it. So this uses several things I have on hand! I also avoided buying taco seasoning in favor of making my own. I tend to make my own spice blends, just like I tend to make my own salad dressing--it just makes more sense to do it that way, and I save money.

I don't even like the smell of tequila, but cooked down like this with the seasoned soy curls, the "meat" was perfect. And the other things are things I knew I would love, that definitely did not disappoint.

I was embarrassingly excited to get to have flour tortillas, though. I could have made my own in theory, but I let myself buy some. I haven't had flour tortillas in absolute ages--not so far in 2025, at least--and sometimes, they are just so comforting. After I finished this taco, I made another; the soy curl mix was delicious with everything else and I couldn't just have one.

For me, anyway, this was a perfect meal!

    1) tonight made--planned since Monday--flour tortillas (yes, a serious--favorite-- comfort food, flour tortillas--always make my own, and have a smallish rolling pin just to make them, which is well-travelled, having shared with colleagues/friends/loved ones in the following countries where I've lived and worked: USA, Nicaragua, Guatemala, UK, France, Tanzania, Senegal, Cambodia, Thailand, Australia, New Zealand). Had these filled with refried black beans, finely-shredded red (purple?) cabbage, sliced green onions, cashew/lime/cilantro/jalapeno crema;
    2) thanks for reminding me to use soy curls (have two bags, waiting to be used);
    3) love that you had all of the essential accompaniments, i.e. guacamole, pico, sour cream;
    4) a beans, rice, flour tortilla meal is always going to be my idea of a perfect meal.
