Laptop Lunches #311

An attempt at veganized Swedish meatballs using Gardein meatballs, strawberries, noodles, and green beans.

This wasn't bad, but I think the Gardein meatballs are much better suited to tomato-based sauces. I'm not sure. I'll have to try this again sometime with some different seasonings.

This lunch box is on its last gasps of life, incidentally. The plastic is starting to crack along the fold for the lid and the green container is hopelessly stained. It's hard for me to part with this old standby but I think I may have to replace this it with the new version of this box, which doesn't come in such nice colors. On the up side, all of the containers apparently have lids in the new ones.

  1. Don’t think i ever had swedish meatballs, or a vegan version of them, but i do love meatless balls. Did you like the sauce? Maybe it’s better with chickenless strips or tempeh.
    Your lunchbox has been so well loved! Is there a non-plastic option that’s similar? Maybe that would hold up better to avoid cracking and stains

    1. I thought the sauce was just okay. I know I can do better with the sauce but I was lazy and started with a canned mushroom gravy as the liquid base, and next time I should make it the way I'm supposed to make it. But the meatball flavor seemed wrong for the sauce. I don't know. I'll think on it.

  2. Ooooooor you can get your Monbento ;) Haha I'm an enabler but I really love my Monbento. The meal looks delicious. I've never had swedish meatballs and I'm not typically a fan of meatballs in general but I definitely think this looks tempting! Hooray for strawberries!

  3. Do the noodles get stuck together on their own like that?
    It is hard when things we love and have used for so long finally start breaking. Sounds like this lunchbox has served you very well.

    1. If you add a bit of oil to them or some vegan butter (I usually use the butter) they won't stick together. It doesn't take much--just a bit to coat them.
