Happy Jackson Snack Boxes #68

Kale and Caramel's poppyseed banana bread, mango chunks, blackberries, some margarine for the bread, cucumber slices, and a little chick cup with everything bagel seasoning.

The recipe for this bread got me super excited, but in the end it was just okay. I doubt I would make it again. It tasted quite different than I'd expected. I don't know how to describe it other than a very strong "healthy" taste. But I like the idea of banana poppyseed bread with coconut and pecans, and I may play around with not-so-healthy versions sometime.

  1. The bread sounds good in theory, shame it wasn't quite what you were hoping for. But does sound like a good base of flavours for experimenting with if you feel inspired.

    1. It sounded SO GOOD! I think part of it was it just wasn't sweet enough. But I also think the dates gave it a strange taste for me. I might try using sugar instead of dates sometime.

  2. Aww it's too bad that the banana bread was just ok! I use Chocolate Covered Katie's fat free banana bread recipe and use oat flour instead and sub chocolate chips and walnuts in for the strawberries. It's really delicious. I think I cut the sugar a little too because it's pretty sweet. The fruit combo sounds so good too and that chick cup is adorable!

    1. I've done a lot of experimenting with a coconut-chocolate chip banana bread, but I can't seem to get it quite right. Someday!
