Greek orzo salad, pineapple chunks, a strawberry to fill a hole, and the "Chicky salad" you saw on Friday (from Isa Does It) on a hamburger bun.
This felt like a very "crunchy" lunch--the orzo salad is a lot more veggies than pasta, and there is something about "Chicky salad" that makes me feel I've been transported to 1970s veganism. But it tastes good and I do feel healthy eating it--hard to describe, really, what I mean by that. It's kind of a clean feeling, with good energy afterward. (I don't feel that way after vegan Ben & Jerry's, of course.) Not bad for a Monday.
