ECO Lunchbox Three-in-One #67
Green bean salad with tomatoes and pine nuts, some peanut butter cracker sandwiches, and golden beet salad.
This was not the most logical of meals, but it had such pretty colors! I also love that the golden beets don't stain everything the way red beets do, and they have a milder flavor. I have never cooked beets before. I know that seems weird, but they seem really intimidating, so I just buy them pre-cooked in the produce section and waste my money, I guess, and thus eat few beets--but I also don't want everything in my kitchen to turn pink. However, I read something somewhere about how nice they are in late winter--and we've had one heck of a long winter--so I decided to pick up a bunch. I didn't regret it.
