Laptop Lunches #293
Improvisational potato salad, blueberries, some mini dark chocolate peanut butter cups, baked beans, and some golden beet salad I'd practically forgotten about.
There is much to love about potato salad, no matter the approach taken. I suppose one up side to me suddenly having all these potatoes is that many of the lunches I'm making are gluten free, for those of you looking for ideas for gluten free vegan meals.
