Monbento Square #30 (Single Tier)
Artichoke-potato gratin and more of the zucchini you saw yesterday.
The recipe for the gratin is found at Holy Cow, but I substituted canned artichokes for the frozen ones because that's what I had, and made my own vegan hamburger crumbles because I didn't have any frozen crumbles. I can't fully evaluate the recipe as a result (though my vegan hamburger crumbles were awesome and I will definitely make them again; recipe here). Still, I probably won't make this particular dish again; the artichokes were overwhelmed by the other things and I rarely tasted any. But potatoes are really nice, so I don't really mind that much.

Not enough people use TVP. It's so cheap and versatile.
