Recipe: Strawberry-Lemon Breakfast Pizza
I found a recipe for a strawberry lemon-cream pie breakfast pizza at Athletic Avocado, and scaled it down and veganized it. (I mean, what else am I doing around here?) It was really good! So here you are, coming to a vegan breakfast compilation someday soon, but I wanted you to have the recipe now. I'm sequestered/voluntarily self-isolated/practicing social distancing/whatever and I just need the immediate gratification of impressing you with my breakfast.
I don't give exact amounts for the toppings because it seems to me those are really personal preferences and also pretty easy to guess by looking.
Strawberry-Lemon Breakfast Pizza
Serves: 1
1 1/2 tablespoons hot water
1/2 tablespoon ground flax seed
1/2 cup quick-cooking oats
1/8 teaspoon vanilla extract
3/4 teaspoon lemon juice
2 tablespoons applesauce
Vanilla non-dairy yogurt
Lemon zest or dried lemon peel (I, sequestered as you know, used dried lemon peel)
Finely chopped walnuts
Sliced strawberries
Mix hot water and flax seed; set aside and allow to thicken.
Preheat oven to 350 degrees.
Stir together thickened flax seeds and water, oats, vanilla, lemon juice, and applesauce until well combined.
Using a spoon, make a thin round from the oatmeal mixture (about 1/4 of an inch thick) on a parchment-lined baking sheet. Bake for 10-15 minutes. Remove from oven and allow to cool from hot to warm.
When at the desired temperature, top with yogurt, strawberries, walnuts, and lemon zest/peel.

ReplyDeleteThanks! One benefit of this isolation is that it gives me more time to do things like ensure all my strawberry slices are the same size. If they keep me inside long enough I might turn into a proper food blogger.
