Sequestration Meal #8
I figured now was the time to try making vegan cottage cheese. I made a somewhat thicker version of the recipe from It Doesn't Take Like Chicken. It did not taste like cottage cheese and I wouldn't recommend eating it by itself. Also, I think me adding tomatoes turned it kind of yellow. But! It turned out to be good with some chopped scallions, cucumber, and grape tomatoes with a generous amount of salt and pepper. I ate this tofu "cottage cheese" salad with the last of my "everything" seasoned flatbread crackers.
This was a hard day. I don't even know how to describe what it felt like. But I visited a very obscure cemetery over the weekend, where could be alone but not inside my apartment, and I think it helped.

Cottage cheese is one of those things I haven't been tempted to make vegan yet, but if it didn't actually taste like cottage cheese, maybe I would like it, haha!

I do miss cottage cheese, and I feel like it must exist somewhere in vegan form such that I would want to just eat a bowl of it the way I used to. But this was fine.
