Dinner Bowl #32
I did my best with this photo, but Standard Time has made dinner photography a lot more challenging. Here we have another attempt at green rice (a much better attempt), Mexican mushrooms, a non-dairy quesadilla on a protein-boosted whole wheat tortilla, some canned chipotle-spiced red beans, some avocado, and non-dairy sour cream.
It's variations on a theme, as you know, for me to have something like this. I think I prefer my more typical version of this--refried beans, Mexican rice, etc.--but this was good, too. I hadn't bought tortillas in absolute ages, and I'm so glad I did this time! A quesadilla really elevates a meal like this.
I had dropped my bag of avocadoes and unfortunately I bruised them pretty heavily, so I didn't get to eat as many avocadoes as I'd like. But what I was able to salvage was nice to have. One lives and learns, I suppose.

Yum!!!! Quesadillas are so yummy and was a perfect addition to this meal!
