I had some leftover stelline soup I made earlier (don't think you saw it, but I don't recall), a few slices of veggie bologna, and some lettuce and tomato in the fridge, plus a mini baguette in the freezer, so that was an easy lunch. To make it fancier, I dressed the lettuce in a red wine vinaigrette before putting it on the baguette along with some olives, tomato, vegan mayo, and the aforementioned bologna slices. I held the sandwich together (barely) with a toothpick.

Making your sandwich fancier does have a way of elevating a leftover soup meal! Soup is perfect for this time of year, too.
