Dinner Plate #8

 


I was craving stuffed peppers. I think in general this week I'm leaning toward familiar and comforting foods; it has been a stressful time. So I made TVP stuffed peppers and served them up with mashed potatoes, steamed broccoli/cauliflower/carrots; and sauteed yellow squash.

It was colorful and tasty; I can't really ask for more than this. I adore stuffed peppers. I just haven't made them in a really long time. Now that I can have my oven on, I would like to have more stuffed peppers, but I say that about everything I bake--I want more stuffed peppers, more casseroles, more pizzas, more lasagnas, more enchiladas...

But this time I froze some peppers to have later, perhaps in a time without free use of the oven. So we'll see how it all turns out!

  1. This is such a beautiful plate! I wish I liked bell peppers more because stuffed peppers sounds like such a great meal! I use mushrooms usually but I may try a red pepper because I'm starting to be able to enjoy them in small quantities. Being able to use the oven really opens up the possibilities!

    1. For me, the key to getting to where I enjoyed peppers was starting slowly and having them finely chopped and well cooked. I personally prefer my veggies softer than many people do, though. I also would chop them finely--almost mince them up--and put them in salads. You might like them after a while, or you might not, but I hope whatever you end up eating, you like it!

    2. Yes!!! That's how I've been dipping my toe in lol. I'll eat it if it's cut up small and cooked really well. Im determined to work my way up to stuffed peppers! And I can only eat red, the green are so gross 😅

One of my intermediate pepper dishes is to caramelize sliced bell peppers with onions--cook low and slow with salt and pepper in some vegan butter and even cover them so they steam and get really soft if they aren't softening for you--and then add some sliced veggie sausages. Serve that with mashed potatoes and you'll be halfway to stuffed peppers, but it's far less intimidating.
