Dinner Bowl #33

 


I had to remind myself that I have easy-ish food that doesn't require much brain power, after the distresses of the last week. Here we have vegan macaroni and cheese made with my favorite cashew and sweet potato-based sauce; some canned baked beans I doctored up with some onions, bell peppers, soy sauce, and barbecue sauce; and broccoli.

It was good; of course it was. I've had some variation on this dozens of times. What's important is not that it is earth-shattering. What's important here is that it is nourishing and took me less than half an hour to make, and still I generated leftovers that I can use for other meals.

I am swimming through sand but somehow doing okay. And I hope that if you are, too, this can serve as a reminder that it's still important to feed yourself, no matter how difficult it becomes. I didn't want to eat. I did. Every day is made of little wins.

I'm not sure if I can post again this week, but trust that I'm okay and I'll be back again soon.

  1. Right there with you. Last week's devastation has taken a serious toll on us. Food is important and a saving grace, at the moment. Thanks for this perfect, delicious, easy eats suggestion and the reminder of the importance of food.

    1. Thanks, Gina. Yes, food is so important. We take care of ourselves so we can take care of other people later, and be strong enough to do it.

  2. yes it has been tough. and to honest each day seems worse and worse as 1st day acts are declared and cabinet posts filled. very scary indeed.
