Dinner Bowl #34
Hello! Welcome to the pantry challenge that may or may not end up looking like one! We're kicking off with a lentil and sage roast (Field Roast, from my freezer), homemade gravy, garlicky brussels sprouts and potatoes (recipe from Contentedness Cooking), and some microwave-glazed carrots.
Like I said, the pantry challenge won't be obvious for a while, and this is something I would have made without avoiding the grocery store. Would you believe this roast was still in my freezer from last fall? I did kind of go overboard on the vegan roasts last year, I guess. This one is always my favorite. This time, I added gravy, because otherwise I didn't think this meal would satisfy me.
The potatoes and brussels sprouts are a confusing recipe, and I put a lid on my pan so they'd cook faster, but they tasted good. It's unclear from the original recipe whether you bake them or cook them on the stove or both, but I ended up cooking mine on the stove. These are the last of my potatoes, but I do adore a good pan-fried potato, so I'm glad I used them this way.
The carrots were a bit overcooked but still tasty.
I hope you're all doing okay out there! See you again soon.
